Loaded Baked Potatoes

Hands-On Time: 15 minutes | Total Time: 35 minutes | Serves: 4


Ingredients


  • 8  
  • 4 large baking potatoes, cooked and split
  • 1 cup shredded cheddar cheese
  • 4 slices bacon, crisp-cooked and crumbled
  • 1 tomato, chopped
  • 1 bag (12 oz.) Birds Eye® SteamFresh Broccoli Florets, cooked according to package directions
  • 1/2 cup sour cream

Directions


  1. Bake Beer Battered fillets according to package directions. Cut into bite-sized pieces.
  2. Meanwhile, in medium bowl, combine prepared broccoli florets, ½ cup cheddar cheese and tomato. Gently stir in fish.
  3. Evenly top potatoes with mixture. Sprinkle each with remaining cheese and dollop with sour cream
Kitchen Tip: Time Saver: Pierce baking potatoes with fork or knife. Arrange on paper towel and microwave on high 5 to 8 minutes or until potatoes are almost done. Add to the oven with the Fish Sticks and remove when the fish is done.  (This will give you a crispy skin on the outside of the potato)
