Seafarers Spinach Salad

Ingredients


  • 12 Mrs.Paul's® Crispy Fish Fillets
  • 1/3 cup olive oil
  • 2 Tbsp. apple cider or white vinegar
  • 2 Tbsp. whole grain mustard
  • 1 Tbsp. honey
  • 8 cups baby spinach leaves
  • 1/4 cup thinly sliced red onion
  • 4 slices bacon, crisp-cooked and crumbled
  • 2 eggs, hard-cooked and chopped

Directions


  1. Bake Crispy Fish Fillets according to package directions; cut into bite-size pieces.
  2. Meanwhile, whisk oil, vinegar, mustard and honey in a large bowl. Season to taste with salt and ground black pepper. Add spinach and onions; toss well.
  3. Arrange tossed spinach on serving platter and top with bacon, eggs and Crispy Fish Fillets.
